The Story Begins

Hyderabad. The late nineteenth century. The seventh Nizam, Mir Osman Ali Khan — the richest man in the world — sat at his marble table, sipping Irani chai. He was diabetic, fastidious, and deeply fond of biscuits. His court physician forbade sugar. His tongue refused to compromise.

The request was impossible: a biscuit both salted and sweetened in equal measure. One that would not raise the Nizam's blood, but would sing against the chai. And so the Osmania was born — a biscuit that crumbled like a sigh, that tasted of restraint and generosity at once.

A century and a half later, we set out to recreate it — faithfully, unchanged.

Our kitchen is led by twenty years of experience across the Hotel and FMCG bakery industries. We travelled further — into historical culinary journals, into university archives and public-library collections — reading, cross-referencing, tasting, until the original formula yielded its secrets.

Three pinches of farm salt. Three pinches of date sugar. Brown butter folded thrice. Cardamom whispered, never shouted. Not a ratio changed. Not a nuance lost.

BAKLOFS does not modernise these recipes. We do not industrialise the bake. We honour the original — and we ship it, in hand-stamped tins, to your home.
